Sebastián Romero Melchor is the founder and managing partner of Food Law Consultants, the first Brussels-based Spanish firm specialised in food law at EU and Member-State levels.

He obtained a Law degree at the Universtity of Deusto and a Masters degree (LL M) in EU Law at the College of Europe, in Bruges, Belgium.

He has practised as a lawyer in English and Spanish top law firms and in the European Commission. Before establishing his own law firm he spent several years working as an associate lawyer at Uria Menendez, the Spanish leading law firm.

In 2001, he founded a pioneering on-line journal on food law, the Boletí­n Europeo de Derecho Alimentario, which established itself as the leading reference in food law issues in Spain. In 2005 the publication became a monthly newsletter, the Revista de Derecho Alimentario currently published by Food Law Consultants. He contributes to several top food publications such as EU Food Law, Agra Europe, Agrafood Biotech, World Drinks Report and other European leading journals. He is also in charge of the legal analysis section of World Food Regulation Review. He contributes with longer feature articles to Spanish legal journals such as Gaceta Jurídica de la CE y de la Competencia, Comunidad Europea Aranzadi, Alimentaria, etc. 

He is a member of the European Food Law Association, and of the Asociación Iberoamericana de Derecho Alimentario and is a regular speaker in Spanish and EU food law conferences all around Europe.

Sebastián Romero speaks fluently English, French, Italian and Spanish.
